This week's item? Wilted Lettuce!
Week 1 Recipe Challenge:
Charred Wilted Lettuce Cups
Ingredients:
- 1 head of lettuce (romaine, iceberg, or your fave)
- 1 tbsp olive oil
- Salt and pepper to taste
- Your favorite filling (think: leftover rice, shredded chicken, beans, or veggies)
Instructions:
- Preheat your grill or a cast-iron skillet over medium-high heat.
- Cut the lettuce head in half or quarters, keeping the base intact so the leaves hold together.
- Brush the cut sides with olive oil, and season with salt and pepper.
- Char the lettuce on the grill/skillet for 2-3 minutes until you get those gorgeous grill marks.
- Remove from heat, let cool slightly, and stuff with your chosen filling. Enjoy your crunchy, flavorful lettuce cups!
