Fried Lions Mane Burger
The Recipe:
- 1 box of @Smallhold Lions Mane mushrooms (fresh!)
For the batter
- 1 cup flour (gluten-free flour works too!)
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 cup water
- 1 tablespoon of seasoning blend of choice - I made a homemade buffalo seasoning (or just use 1 tsp salt + other favorite spices!)
Dry Mix ( for coating the mushrooms after the wet batter step)
- 1/2 cup flour
- 1/2 cup corn meal (or sub regular flour)
- 1-2 tbsp seasoning of choice
For Frying
- 1 inch of oil in the pan for frying
Instructions:
Make the batter
- Mix the batter into a smooth paste
- Coat the lions mane in the wet batter(cut into “burger” size pieces) but be gentle as the lions mane is fragile! Keep the base of the mushroom intact to keep the pieces together
- Then coat in the dry mix
Fry the Lions Mane
- Heat oil to 334°F (168°C)° (this can be done on the grill with a cast iron skillet!)
- Use tongs to pick up the pieces of coated lions mane and place them into the hot oil (careful to stand back)
- Allow to cook for 4-5 minutes per side until golden brown
- Immediately remove from oil and place on a paper towel-lined plate.
- Serve ‘em hot and with Pulp Chips! Layer with your favorite condiments and enjoy!
